Gluten free diet is in fashion.1 This has resulted in a marked growth of gluten-free market and an increasing prevalence of individuals who follow a gluten-free diet; most of whom do not have any evidence of gluten-related disorders. Avoiding gluten can have negative consequences. Further, using a gluten-free diet may not be all that safe, although information on this issue has been sparse. Using data from the population based National Health and Nutrition Examination Survey (NHANES) study, Raehsler et al2 found an increase in the accumulation of several heavy metals, including lead, cadmium, mercury and arsenic, in persons following a gluten-free diet compared to those not on gluten-free diet.
